Degradation of carbohydrates: III. Unsaturated hexosones

Abstract

Two unsaturated osones have been isolated as byproducts from the decomposition of 1,1'-(carboxymethylamino)bis-[1-deoxy-D-fructose]. They were shown to be the trans- and cis-forms of unsaturated 3,4-dideoxy-D-glucosone, D-glycero-1,1,5,6-tetrahydroxy- trans-hex-3-en-2-one, and D-glycero-1,5-epoxy-lαβ,6-dihydroxy-cis-hex-3-en-2-one respectively, by their chemical properties and by ultraviolet, infrared, and proton magnetic resonance spectroscopy.
