Water-soluble constituents of fruit. III. An examination of the sugars and polyold of apricots, peaches, pears, and apples by paper chromatography

Abstract

The sugars and polyols in 80 per cent. ethanolic extracts of apricots, peaches, pears, and apples were examined by paper chromatography using several solvents. Xylose, fructose, glucose, sucrose, sorbitol, a cyclitol (probably mesoinositol), and one or more ketose oligosaocharides were detected in all the fruits. Galactose was detected in pears and may also be present, in trace amounts, in peaches and apples. Apricots, peaches, and pears picked in several seasons were examined.
