Studies on the Action of Rennet on Casein and the Nature of Clotting

Abstract
Casein and paracasein preparations have been compared by various methods including titration techniques, solubility, and ultraviolet spectra of the proteins and their azo-derivatives. It is suggested that rennet may release imidazole or phenolic groups from intramolecular linkage. The liberation of proteoses was confirmed but their presence does not appear to bc essential for clotting. Support is given to the view that a-casein is more affected by rennet than are other casein components. The stability of the clots and the effect of electrolytes on the clotting process have been examined.https://doi.org/10.1071/BI9540085
